Huni Folhi (Coconut Pancake)

Huni Folhi[1]

Serves 8

Ingredients

1 cup rice flour (coarse)

½ cup plain flour

½ cup grated coconut

¾ cup sugar

1 ½  cup water

3 eggs

1 tbsp rose water or jasmine water (maafen)

 Preparation

  1. Dissolve rice flour and plain flour in water.
  2. Beat eggs and add.
  3. Mix in the rose water, coconut and sugar.
  4. Beat until the sugar dissolves.
  5. Heat a non stick pan.
  6. Pour a large tbsp of batter on to this pan and spread to form a thick pan cake.
  7. Cover with a lid and cook for a minute.
  8. Fold the pan cake.
  9. Transer to a serving dish.
  10.  Serve hot or cold.

    What’s the use of the scraped coconut?

    Hey Reviewer,
    scraped coconut is to make coconut milkshake to go with the dish!!
    excellent combination, try it out!!!!!! 😛
